Clean Chocolate Brownies

This was an absolute revelation when we heard about it! CLEAN brownies! We loved these so much when we first tried them that we even bought a new food processor to cope with the extra demand!

Ingredients (Makes about 10 brownies)

2 Medium/Large Sweet Potatoes (approx. 600g)
80g Ground Almonds
100g Buckwheat/Almond Flour
14 Dates (remove the stones)
4 Tablespoons Raw Cacao
3 Tablespoons Pure Organic Maple Syrup
Pinch of Sea Salt
Method

Peel, chop and steam the sweet potato for about twenty minutes until they're good and soft
Pre-heat the oven to 180C
When the sweet potato is done, add to a food processor with the pitted dates and blend until smooth, sweet and sticky!
Mix the remaining ingredients in a bowl, add in the sweet potato mixture and stir well
Place in a lined baking tray and cook for about twenty minutes - test by putting a fork into the brownie, it should come out clean.
Remove from oven and leave in tray to cool for ten minutes.
Remove from tray, wait another few minutes then cut up the brownies and enjoy!
