Choc Berry Pancakes

Ingredients

  • 1 tablespoon coconut flour
  • 1 teaspoon cacao powder
  • 2 x egg whites
  • ½ cup rolled oats
  • 1 tablespoon low fat cottage cheese
  • 1 heaped teaspoon granulated stevia
  • Water - add to your liking
  • 30g organic frozen berries
  • Cinnamon
  • Cooking spray
  • 1 tablespoon Greek yogurt as topping

Method

  1. Blend all ingredients (except for berries, cinnamon and yogurt) in a blender.
  2. Lightly grease a non-stick pan.
  3. Pour part of the mixture in pan and sprinkle with a couple of berries.
  4. Cook as you would normal pancakes, flipping part way though.
  5. Repeat with remaining batter.
  6. Top with yogurt and remaining fruit.
